Last night I had to make an off the cuff dessert (which my dad requested 5 minutes before sitting down to dinner) with zero time and barely any ingredients in the cupboards! I found some cooking apples mum had picked the other day and some frozen raspberries in the freezer, so I decided I’d make a speedy crumble. When you think of crumble, you think boring. But the addition of flaked almonds and raspberries gives this crumble that little bit extra.
150g plain flour
90g light brown sugar
100g room temperature butter + extra for greasing the dish
1/2 tsp ground cinnamon
20g flaked almonds
4-5 medium size cooking apples
100g raspberries (fresh or forzen, doesn’t matter)
2-3 tbsp granulated sugar (depending on how sweet you’d like it)
Preheat the oven to 160C. First make the crumble: Place the flour and butter and brown sugar in a bowl and rub together with your fingers (or mash it with a fork). Add the cinnamon, oats and almonds and mix through.
Next, grease a pyrex/casserole dish with butter(I use a 26x18cm/10×7″ size dish). Peel and slice the apples and arrange them along the base of the dish. Scatter over the raspberries in an even layer. Sprinkle over the granulated sugar and then cover with the crumble. Bake in the preheated oven for 40 minutes.
Eat it while still hot, serving it with homemade ice cream and custard for an extra treat (As in my photograph).
