Chocolate mousse cups with honeycomb

So I posted a recipe a couple of weeks back for chocolate mousse cups with almond praline….. Next week I have a cooking competition in school and felt this was the ideal dessert! However I wanted to incorporate a local ingredient so instead of making the praline, I used local honey to make honeycomb! The crunch of the honeycomb pairs so well with the smooth mousse….. A successful variation in my eyes!

    The honeycomb look amazing! I”m always wary of trying to make it as I’ve had a couple of disasters with sugar in the past.
